HAPPY FLORENTINE COOKIES



In this Happy recipe I recommend a strain high in Limonene. The limonene terpene pairs nicely with the orange zest ingredient - "the know" behind that is what makes the Florentine one of my TOP FAVORITE COOKIES!

"The Know" Behind Limonene


HAPPY FLORENTINE COOKIES

yield: 5 dozen 3" Florentines

INGREDIENTS:

- 5 oz sliced, blanched almonds
- 21 g all-purpose flour
- Finely grated zest of 1 orange
- 2 pinches of salt
- 170 g sugar
- 41 g light corn syrup
- 70 g CANNA BUTTER
- 2 tbsp heavy cream
- 1/2 tsp pure vanilla extract
- 140 g of melted dark chocolate

YOU WILL NEED:

- baking sheet
- parchment paper
- heatproof medium size bowl (glass works best)
- medium saucepan
- spoons
- airtight storage container
- citrus zester 


DIRECTIONS:

- Preheat: 350 degrees F (176° C)

- Line a baking sheet with parchment paper.

- In a food processor, pulse almonds until they are finely chopped (not pasty). In a large bowl, stir together your finely chopped almonds, flour, orange zest, and salt.

- Over medium heat in a large saucepan, put in the sugar, cream, corn syrup and CANNA BUTTER.  Stir occasionally, until the mixture comes to a boil and the sugar is completely dissolved.  Continue to boil for 1 minute.  

- Remove from heat and stir in the vanilla extract, then pour mixture into almond mixture just to combine.  Set aside to cool enough to handle, 30 minutes. 

- Scoop rounded tsp and roll into balls.  Place on prepared baking sheet, leaving 3 inches between each cookie (they spread wide). 

- Bake 1 pan at a time, until cookies are thin and have an even golden brown color, rotating pans halfway through baking time, about 10-12 minutes.  Cool on baking sheet for 5 minutes, then transfer racks to cool.  Repeat with remaining batter.  

- Separately, put 1/2 chocolate in a medium heatproof bowl.  Bring a saucepan filled with 1"-2" of water to a low simmer.  Place heatproof bowl filled with chocolate over saucepan, but not touching the water (double boiler). Stir in remainder of chocolate. Once melted and smooth, drizzle the chocolate as desired over your cookies.  Set aside at room temperature until the chocolate has set. 

*Store baked cookies carefully, separated by parchment paper, in an air-tight container for up to 3 days.
